Oh-My-God Brownies
Major credit for this recipe goes to Jenna @ Eat Live Run.
To make it gluten-free friendly, I tweaked it just a tad.
4 oz. unsweetened bakers chocolate (Baker’s brand)
2 sticks butter
2 c. sugar
4 eggs
1/2 c. almond meal (Bob’s Red Mill)
1-1/2 t. vanilla extract (Authentic foods)
1/2 t. salt
1/2 c. semisweet chocolate chips (Nestle)
Preheat oven to 325*.
Melt chocolate and butter over low heat, stirring frequently. Once melted, remove from heat and stir in sugar, eggs, and vanilla. Stir in almond meal, salt and fold in chocolate chips.
Pour into an 8×8 greased baking pan and bake for 50-55 minutes. (Mine was still on the gooey side at 55, so I might increase the heat to 350* or bake for a bit longer at 325* next time.)

I have a recipe for brownies on my blog for fudge brownies from my pre-gluten free days that is *kinda* similar to this one. I need to think about modifying my recipe using smart balance and almond flour and see how they turn out, thanks for the idea! I love oooey-gooey brownies!!
