Graham Cracker-style Pie Crust
- 1 c. finely chopped walnuts (pecans or other nuts would also work)
- 1/3 c. sorghum flour
- 1/3 c. brown rice flour
- 1/3 c. arrowroot starch
- 1 t. guar/xanthan gum
- 1 t. vanilla
- 1/2 c. brown sugar
- 1/2 c. cold unsalted butter, cut into pieces
- Grease a springform pan or pie plate.
- Food process the walnuts until they finely chopped. Add sorghum flour through sugar and process until mixed well. Add butter, a few pieces at a time, until incorporated.
- Using your hands, spread mixture into the pan and press down until evenly distributed. Fill with any filling. (This does not have to be baked)
