Cranberry, Apple, & Butternut Squash Succotash
“Succotash” consists of beans and corn, but I thought the name for the random combo was also appropriate for this dish.
- 1 bag fresh cranberries
- 1 butternut squash, cut into 1 inch cubes
- 1 apple, cut into 1 inch cubes
- sugar, to taste (I used about 1/4 cup and it was still a little tart)
- 1 t. cinnamon
- 1/2 t. nutmeg
- 1 t. vanilla
- dash pumpkin pie spice
- Place cranberries, butternut, and apple into a stockpot and add water to cover (you could also use apple juice or cider).
- Simmer until cranberries pop.
- Drain most of the water from the pot and continue to simmer until everything is soft.
- Drain the rest of the water and add sugar and seasonings.
- Mix well and serve.
